Bourbon Espresso Surprise Brownies

1/2 cup (1 stick) unsalted butter
12 oz semisweet chocolate, broken up
4 eggs
2 cup sugar
1/4 cup bourbon
2 tbl instant espresso powder (see Note)
1/2 tsp salt
1 1/2 cup flour
1 1/2 cup prunes, roughly chopped and tossed with 1 tablespoon Recipe
* Preheat oven to 375 degrees. Grease a 9- by 13 inch baking pan and, for easier cleanup and to help get the brownies out of the pan easily, line it with foil and grease the foil. In a heavy pan, melt butter over low heat. Remove from heat and add chocolate, stirring until chocolate melts. You may have to put the pan back on the heat briefly, but watch that chocolate doesn't burn. Let mixture cool.
* Beat eggs briefly, then add sugar and beat very thoroughly, until batter is thick and turns paler yellow. Add bourbon, espresso powder and salt, and beat until powder dissolves and batter is uniformly brown. Add chocolate mixture and blend well. Add flour and mix just until blended. Stir in prunes. Spread evenly in pan and bake for 25 to 30 minutes, or until a toothpick inserted in center comes out not quite clean. Remove pan from oven and let cool at least 2 hours before cutting. If you can wait, the brownies taste best a day or two after baking, when the flavors have melded.
* Note: If you can't find espresso powder, you can use regular instant coffee, though it is not as strong.
