Almond Cake in Honey Syrup

4 ounces butter
8 ounces sugar
4 eggs, lightly beaten
4 ounces ground almonds
1 teaspoon ground cinnamon
8 ounces fine semolina
SYRUP:
8 ounces sugar
1/2 pint water
3 tablespoons lemon juice
2 ounces blanched almonds, split
Recipe
Preheat oven to 350ºF. Cream butter and sugar together until soft and creamy. Beat eggs into mixture, then add ground almonds, cinnamon and semolina. Line an 18 x 28 cm Swiss roll tin with greased paper, allowing paper to stand about 1 inch higher than tin. Spread mixture in tin, decorate with split almonds, and bake for about 1 hour. Prepare syrup: Dissolve sugar and water in a pan and then add lemon juice and bring to boil. Simmer for about 5 minutes until reduced slightly. Remove pan from heat and allow to cool slightly. Cut cake into squares and then pour over syrup. Serve when cooled.
