Apple: Apple Cobbler Cake

1 1/2 cups vegetable oil
2 cups sugar
3 eggs
2 teaspoons vanilla extract
3 cups self-rising flour
1 cup chopped pecans
3 cups chopped apples Recipe
Preheat oven to 325°F. Spray a 10-inch Bundt pan with non-stick vegetable spray.
In a large mixing bowl, combine oil, sugar, eggs, and vanilla; beat well. Add flour; beat until blended. Fold in pecans and apples. Pour into prepared Bundt pan.
Bake for 1 hour or until a tester inserted in the center comes out clean. Pour Topping over hot cake. Cool in pan on a wire rack for 1 hour. Gently invert cake onto a serving plate.
TOPPING
1 cup firmly packed brown sugar
1/2 cup butter or margarine
1/4 cup milk
In a small saucepan, combine all ingredients; bring to a boil. Boil, stirring often, for 3 minutes.
