    Apple: Apple Coconut Cake

    1 cup vegetable oil
    3 eggs
    2 1/4 cups sugar
    2 teaspoons vanilla extract
    3 cups self-rising flour
    2 cups chopped pecans
    3 cups chopped apples
    1/2 cup flaked coconut
    Brown Sugar Glaze (below)

    Recipe



    Preheat oven to 350°F.  Spray a 10-inch Bundt pan with non-stick vegetable spray.

    In a large mixing bowl, combine oil, eggs, sugar, and vanilla; beat until well blended.  Add flour; beat until blended.  Fold in pecans, apples, and coconut.  Spoon into prepared Bundt pan.
    Bake 25 to 30 minutes or until a tester inserted in the center comes out clean.  Cool in pan for 10 minutes.  Invert onto a serving plate.  Drizzle Brown Sugar Glaze over the cake while still warm.

    BROWN SUGAR GLAZE
    1 cup firmly packed brown sugar
    1/2 cup butter or margarine
    1/4 cup milk
    In a small saucepan, combine all ingredients; bring to a boil.  Boil, stirring often, for 3 minutes.
