Apple: Apple Pie Cake

BATTER:
18 1/4 ozs reduced fat yellow cake mix
1 tsp baking powder
3 whole egg whites
20 ozs apple pie filling
1 tbsp olive oil
1 tsp cinnamon
1/2 tsp lemon extract
1/4 tsp nutmeg
TOPPING:
1/4 c reduced fat margarine cold
1/2 c granulated sugar
1/2 c unbleached flour
1 tsp cinnamon
Recipe
Preheat oven at 350ºF. Prepare a 13 x 9" pan with cooking spray and flour; set aside. To prepare batter, combine cake mix and baking powder in a small mixing bowl. In another mixing bowl, combine egg whites, apple pie filling, oil, cinnamon, lemon extract, and nutmeg. Mix dry ingredients with wet ingredients just until moistened. Pour batter into prepared pan. Meanwhile, to prepare topping, combine margarine, sugar, flour, and cinnamon in another mixing bowl. Blend with a pantry blender until mixture is crumby. Sprinkle the crumbs over top of batter. Bake 35 minutes.
