Loaf Cake: Apple Scotch Loaf Cake

List of Ingredients

1 1/2 cups Sugar
3 Eggs
1/2 cup Oil
1 teaspoon Vanilla
2 1/2 cups All purpose flour
2 teaspoons Baking powder
1 teaspoon Baking soda
1 teaspoon Cinnamon
1 teaspoon Salt
4 cups Apples diced and UNpeeled
1 cup Nuts chopped (optional)
1 cup Butterscotch chips


Recipe

Mix sugar, eggs, oil and vanilla. Add flour mixed with baking powder, soda, cinnamon and salt; mix well. Stir in nuts and apples. Spread in well greased 9x13 inch pan. Sprinkle top with butterscotch chips and bake at 350ºF for 30 to 40 minutes, or until done.
