Apple: Apple Swirl Cake

2 cups chopped apples
3 tablespoons sugar
1 teaspoon ground cinnamon
2 cups sugar
1 cup vegetable oil
4 eggs
1/4 cup orange juice
2 teaspoons vanilla extract
3 cups self-rising flour
Recipe
Preheat oven to 325°F. Spray a 10-inch Bundt pan with non-stick vegetable spray. In a medium bowl, combine apples, sugar, and cinnamon; toss to mix well. Set aside.
In a large mixing bowl, combine sugar and oil; beat until blended. Add eggs, orange juice, and vanilla; beat until blended. Add flour; beat until blended and batter is smooth. Pour one-third of the batter into prepared Bundt pan; top with one-half the apple mixture; repeat layers ending with a layer of batter.
Bake for 1 hour or until a tester inserted in the center comes out clean. Cool in pan for 20 minutes. Remove from pan; cool completely on a wire rack. Dust with confectioners' sugar, if desired.
