    Banana: Banana Cream Cake

    List of Ingredients

    2 1/4 cups self-rising flour
    1 1/4 cups sugar
    1/2 cup butter or margarine softened
    2 eggs lightly beaten
    1 1/2 cups mashed bananas
    1 teaspoon vanilla extract
    1 cup finely chopped pecans
    Marshmallow Frosting (below)

    Recipe

    Preheat oven to 350°F.  Spray 2 8-inch cake pans with non-stick vegetable spray.

    In a large mixing bowl, combine flour, sugar, butter, eggs, and 1/2 cup bananas; beat until smooth.  Add vanilla and remaining bananas; beat until thoroughly blended.  Fold in pecans.  Pour into prepared cake pans.

    Bake for 25 minutes or until a tester inserted in the center of the cakes comes out clean.  Cool in pans for 10 minutes.  Remove from pans; cool completely on a wire rack.

    MARSHMALLOW FROSTING
    1 cup milk
    2 tablespoons all-purpose flour
    1 cup sugar
    2 tablespoons marshmallow creme
    1 cup shortening
    1 teaspoon vanilla extract
    In a heavy saucepan, combine milk and flour; cook, stirring constantly, over medium heat until mixture thickens.  Cool.
    In a small mixing bowl, combine sugar, marshmallow creme, shortening, and vanilla.  Add cooled milk mixture; beat until light and fluffy.  Spread between cake layers and on top and sides of cake.
