Banana: Banana Pineapple Cake

3 cups self-rising flour
1 teaspoon ground cinnamon
2 cups sugar
3 eggs
1 1/2 cups vegetable oil
1 can crushed pineapple (16 ounce)
2 cups mashed bananas
1 1/2 teaspoons vanilla extract


Recipe

Preheat oven to 350°F.  Spray a 10-inch tube pan with non-stick vegetable spray. In a large mixing bowl, combine flour, cinnamon and sugar.  Add eggs, oil, pineapple, bananas, and vanilla; beat until just blended.  Pour into prepared tube pan. Bake 1 hour and 10 minutes or until cake feels firm to the touch.  Cool in pan on a wire rack.
