Carrot: Blender Carrot Pecan Cake

1 cup chopped pecans
1 1/4 cups vegetable oil
4 eggs
2 cups sugar
3 cups thinly sliced carrots
2 cups self-rising flour Recipe
Preheat oven to 325°F. Spray a 10-inch Bundt pan with non-stick vegetable spray.
In a blender; chop pecans until fine; turn out into a small bowl and set aside.
In a blender, combine salad oil, eggs, and sugar; blend for 5 seconds. Gradually add carrots, blending until just grated.
In a large mixing bowl, combine flour and carrot mixture, beating thoroughly. Stir in pecans. Pour into prepared Bundt pan.
Bake for 1 hour 10 minutes or until a tester inserted in the center comes out clean. Cool in Bundt pan for 20 minutes. Remove from Bundt pan; cool completely on a wire rack.
