    Carrot: Carrot Cake

    List of Ingredients

    3 cups flour
    1 1/2 cups Wesson oil
    3 teaspoons baking powder
    2 cups sugar
    2 teaspoons soda
    2 cups grated carrots slightly packed
    1/8 teaspoon salt
    1/2 cup pecans
    2 teaspoons cinnamon
    1 small can crushed pineapple
    4 eggs

    ***FROSTING***
    1 package (3 oz.) cream cheese
    1 teaspoon vanilla
    1 1/2 cups powdered sugar
    1 tablespoon cream

    Recipe

    Sift together dry ingredients; set aside. Beat eggs, oil, and sugar. Add carrots; mix well. Add dry ingredients; mix well. Add pecans. Drain and add pineapple. Pour batter into a greased and floured tube pan. Bake at 350ºF for 1 hour, 15 minutes.
