    1/2 cup vegetable oil
    1 cup honey
    1 teaspoon sugar
    2 eggs
    1/2 cup vanilla extract
    2 cups grated carrots
    2 cups whole wheat flour
    1/4 cup nonfat dry milk powder
    1 teaspoon ground cinnamon
    1/4 teaspoon salt
    1 tablespoon baking powder

    Preheat oven to 375°F.  Spray a 13x9-inch baking pan with non-stick vegetable spray.

    In a large mixing bowl, combine oil, honey, and sugar; beat until smooth and thick.  Add eggs, one at a time, beat well after each addition.  Stir in vanilla.  Fold in carrots.

    In a medium bowl, combine flour, dry milk powder, cinnamon, salt, and baking powder; add to carrot mixture, blending thoroughly.  Pour into prepared baking pan.

    Bake for 30 minutes or until a tester inserted in the center comes out clean.  Cool in pan on a wire rack.
