    1 1/2 cups chopped dates
    1 1/4 cups chopped candied cherries
    1 1/4 cups chopped candied pineapple
    2 cups chopped pecans
    4 eggs
    1 cup sugar
    1 1/2 cups self-rising flour
    Confectioners’ sugar icing
    Candied cherry halves

    Preheat oven to 325°F.  Spray a 10-inch tube pan with non-stick vegetable spray. In a medium bowl, combine fruits and nuts; set aside. In a large mixing bowl, beat eggs until thick and lemon-colored.  Add sugar and flour, stirring until well blended.  Stir in fruit-nut mixture.  Pour into prepared tube pan.

    Bake 1 hour and 45 minutes or until a tester inserted in the center comes out clean.  Cool in pan for 15 minutes.  Remove from pan; cool completely on a wire rack.  Drizzle with confectioners’ sugar icing.  Garnish with candied cherry halves.
