Chiffon: Apple Chiffon Cake

1/3 cup vegetable oil
3/4 cup sugar
2 eggs
3/4 cup self-rising flour
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 cup finely chopped apple
Walnut Topping (below) Recipe
Preheat oven to 350°F. Spray a 13x9-inch baking pan with non-stick vegetable spray.
In a large mixing bowl, combine oil and sugar; beat until well blended. Add eggs; beat well. Add flour, nutmeg and ginger; beat until just blended. Stir in apples. Spread evenly in prepared baking pan. Sprinkle Walnut Topping over the batter.
Bake 25 to 30 minutes or until a tester inserted in the center comes out clean. Cool on a wire rack; cut into squares. Serve topped with whipped cream, if desired.
WALNUT TOPPING
2 tablespoons sugar
2 tablespoons finely chopped walnuts
1/2 teaspoon ground cinnamon
In a small bowl, combine all ingredients; mix well.
