3 cups grated carrots
2 cups sugar
1 cup oil
4 eggs, room temperature
2 cups flour
2 teaspoons baking soda
1 teaspoon kosher salt
1 teaspoon ground cinnamon
1 whole or chopped walnuts (garnish)
Recipe
Good served smothered in cream cheese frosting. Preheat oven to 350ºF. Lightly grease an flour two 9" cake pans. Place the carrots, sugar, oil, and eggs in the bowl of a mixer fitted with a paddle and beat until combined. Add the flour, baking soda, salt, and cinnamon and beat until combined. Scrape down the sides of the bowl and place in prepared pan. Transfer to the oven and bake until a tester comes out clean, about 25 minutes. Cool in the pans for 15 minutes, and then invert onto a rack. Cool to room temperature. While the cake is baking, prepare cream cheese icing. When cake is completely cooled, spread with icing. Garnish with chopped nuts, if using.
