    Lemon: Double Lemon Cake

    Adapted from Over 200 Ways To Use Your Bundt Pans

    List of Ingredients

    18 1/4 ozs lemon cake mix
    3 ozs lemon pudding mix
    8 whole egg whites slightly beaten
    1 c water
    1 tbsp olive oil

    GLAZE:
    1/2 c powdered sugar sifted
    1/4 tsp pure vanilla extract
    1/2 tbsp skim milk

    Recipe

    Preheat oven to 350ºF. Prepare a 12-cup fluted pan with cooking spray and flour; set aside. In a mixing bowl, combine cake mix, pudding mix, egg whites, water, and oil. Mix until well blended. Spread into prepared pan. Bake for 45 minutes. Meanwhile, to prepare glaze, combine powdered sugar, vanilla extract, and milk in a small mixing bowl. Mix until smooth. Spread over cooled cake.
