Fog's Whiskey Cake

1 1/2 c Water
1/2 c Jack Daniels
1 tb Instant coffee
1 1/4 c Unsalted butter
1 c Unsweetened cocoa powder
2 c Sugar
2 c Flour
2 ts Baking powder
1/8 ts Salt
1 c Pecans chopped
2 tb Jack Daniels
2 ea Eggs
Recipe
In a VERY LARGE saucepan, heat & stir water, whiskey, coffee, butter and cocoa until butter melts. Remove from heat and beat in sugar. Cool slightly, then whisk in the eggs, blending thoroughly. In a large mixing bowl, stir together the flour, baking powder and salt, using a whisk to blend completely. Beat into the chocolate mixture until incorporated. Stir in pecans. Turn the batter into a greased & floured 9" tube pan. Smooth thetop of the batter with a spatula. Bake the cake on the middle level of a preheated oven (325¼F) for 60-75 minutes until a cake tester or skewer comes out clean.
IMMEDIATELY sprinkle with the remaining 2 tbsp whiskey, or wrap in a whiskey-soaked cheese cloth after it has been cooled on a rack and removed from the pan. Serve with whipped cream or vanilla ice cream.
