Apple: French Apple Caramel Cake

1 cup sugar
1 cup oil
2 eggs
2 teaspoons vanilla
2 cups flour
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
3 cups sliced granny smith apples
1/2 cup chopped walnuts
1/2 cup raisins
50 soft caramels
Recipe
Grease and flour 9"x13" pan. While the caramels are melting in a double-boiler, mix all other ingredients in a large bowl. Mixture will be thick. Spread evenly in pan. Drizzle half of the melted caramels over top. Drop the remaining melted caramels by dollops over top as well. Bake at 350ºF for 40-45 minutes.
