    Chocolate: Granny's Chocolate Cake

    List of Ingredients

    4 squares unsweetened chocolate, divided
    1 3/4 cups sifted cake flour
    1 1/2 cups sugar
    2 teaspoons baking powder
    1/4 teaspoon baking soda
    1 teaspoon salt
    1/2 cup solid vegetable shortening
    1 1/4 cups undiluted evaporated milk, divided
    1 teaspoon vanilla extract
    2 eggs
    Fluffy chocolate frosting

    Recipe

    Melt 2 squares of the chocolate. Set aside. In large bowl, sift together cake flour, sugar, baking powder, baking soda and salt.

    Stir shortening to soften, then add sifted ingredients. Beat in 1 cup of the evaporated milk and vanilla. Mix to moisten all ingredients, then beat 2 minutes at low speed of electric mixer or 300 vigorous strokes by hand.

    Add eggs, remaining 1/4 cup milk and the reserved melted chocolate. Beat 1 minute or 150 strokes. Pour batter into two 9-inch layer pans that have been lined with parchment paper.

    Preheat oven to 350 degrees. Melt remaining 2 squares chocolate. Pour in a circle on top of batter in each pan, about 1 inch from rims. With rubber scraper, swirl chocolate in overlapping circles, once around pan. Bake in preheated oven 30 minutes or until done. Cool.

    Split cakes to make 4 layers and spread fluffy chocolate filling between layers. Assemble layers, then chill before serving.


    Fluffy Chocolate Filling

    1 1/2 squares unsweetened chocolate, melted, cooled
    1 cup solid vegetable shortening
    3/4 cup sugar
    1/2 cup undiluted evaporated milk
    1 1/2 tablespoon water
    1/4 teaspoon salt
    1 1/2 teaspoon vanilla extract

    In small bowl, combine all ingredients and beat well with an electric mixer or sturdy egg beater for 10 minutes or until fluffy.
