    Angel Food: Lemon-Lime Angel Food Cake

    List of Ingredients

    1 cup Cake Flour
    12 large Egg Whites
    1/2 teaspoon Salt
    2 teaspoons Fresh Lime Juice
    1 1/4 teaspoons Grated Lime Peel
    1 2/3 cups Superfine Sugar
    1 teaspoon Cream of Tartar
    2 teaspoons Fresh Lemon Juice
    1 1/4 teaspoons Grated Lemon Peel

    Recipe

    Position rack in lowest third of oven at 350ºF. Sift flour with 1/3 cup sugar. Beat egg, lemon & lime juice. Gradually beat in remaining 1 cup sugar. Continue beating until stiff. Mix lemon and lime peel. Sift 1/4 cup of flour into whites. Continue until flour is gone. Spoon into 10" tube pan. Bake for 42 minutes. Invert pan and place it on a bottle and allow to cool. Pour Lemon-Lime Glaze over Cake.
