Devils Food: Low-Fat Devil's Food Fudge Cake

nonstick cooking spray
1 cup water
1/2 cup prune puree
3 large egg whites
1 1/2 teaspoons vanilla
1 1/2 cups all-purpose flour plus 2 tablespoons

1 cup granulated sugar plus 2 tablespoons
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
Recipe
Preheat oven to 350ºF. Coat 9-inch square baking pan with cooking spray; set aside. In mixer bowl, combine water, prune puree, egg whites and vanilla; beat to blend thoroughly. Add flour, sugar, cocoa powder, baking powder, baking soda and salt. Spread batter in prepared pan; bake in center of oven about 30 minutes, or until wooden pick inserted into center comes out clean. Cool on rack.
