1/3 cup applesauce
1 cup dark molasses
1 1/4 cups orange juice
1 tablespoon finely grated orange rind
2 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
2 teaspoons ground ginger
1/2 teaspoon salt
1/2 cup raisins
Recipe
Preheat over to 350ºF. In a large bowl, mix together wet ingredients. In a medium bowl, sift together dry ingredients. Add raisins. Add dry ingredients to wet ingredients and mix well. Pour into a non-stick 9-inch by 13-inch pan and bake 40 minutes, making sure not to overbake - should be moist. 24 servings.
