    Chocolate: You've Got to Be Kidding Cake

    List of Ingredients

    1 1/2 cups sugar
    1 cup water
    1 1/2 pounds chopped bittersweet chocolate
    1 pound sweet butter, cut into chunks
    10 whole eggs

    Recipe

    Preheat oven to 350ºF. Butter two 9-inch round cake pans and line with buttered baking parchment. Place chocolate in a metal bowl over a pot ot simmering water until melted, stirring often. Combine the sugar and water in a heavy saucepan and boil until temperature reaches 242 degrees on a candy thermometer. Slowly add the mixture into the melted chocolate ina thin steady stream and stir. Beat in the eggs alternately with the chunks of butter. Pour the mixture in the prepared pans and place the pans in a large pan of water that comes halfway up the sides. Bake 45 to 60 minutes, or until set. Don't overcook. Cool overnight before cutting.
