    Pudding: Baked Blueberry Pudding Cake

    List of Ingredients

    2 cups flour
    1 1/2 cups sugar
    2 teaspoons baking powder
    3/4 teaspoon nutmeg
    1/2 teaspoon salt
    1/2 teaspoon grated lemon rind
    3/4 cup butter, softened
    2 eggs
    3/4 cup milk
    2 cups blueberries

    LEMON SAUCE:
    1/2 cup sugar
    1 tablespoon cornstarch
    1/4 teaspoon salt
    1/4 cup boiling water
    1 egg yolk
    3 tablespoons lemon juice
    1 teaspoon grated lemon rind
    2 tablespoons butter

    Recipe

    Combine flour, sugar, baking powder, salt, nutmeg and peel in large bowl. Cut in butter with pastry blender until size of small peas. Add eggs and milk; mix on low speed for 3 minutes. Pour into greased and floured 9x9" pan; top with blueberries. Bake at 350ºF for 1 hour and 10 minutes or till tester comes out clean. Make sauce by combining sugar, cornstarch and salt in saucepan. Stir in cold water and mix well. Gradually stir in boiling water; cook and stir over medium heat 10-12 minutes or til clear and quite thick. Blend egg yolk with lemon juice; gradually stir into sauce. Stir in peel and butter. Continue cooking for 2 minutes. Serve warm pudding with sauce. Serves 9.
