    Mousse: Double Chocolate Mousse Cake

    List of Ingredients

    1 pound butter
    1 pound semisweet chocolate
    1 cup half and half
    1 cup sugar
    2 teaspoons vanilla
    8 eggs, slightly beaten

    GANACHE:
    1 pound semisweet chocolate
    1 tablespoon butter
    3 tablespoons heavy cream

    Recipe

    Combine first five ingredients in heavy saucepan. Over medium heat, stir until chocolate is melted and smooth -- do NOT allow to boil. Add warm chocolate to beaten eggs and stir to combine. Pour mixture into a 9" springform pan and bake at 350ºF for 35 minutes, or until cake tester comes out clean. Allow to cool completely before removing from pan. Invert onto plate and cover with ganache. For ganache, melt ingredients until smooth. Pour over cake and let run down sides. Let stand until cool. Decorate with whipping cream and enjoy.
