    Spice: Fat Free Spice Cake

    1  cup flour
    1/4  cup cornstarch
    1 1/2  teaspoons baking powder
    1/2  teaspoon salt
    1/2  teaspoon ground cinnamon
    1/4  teaspoon ground ginger
    1/8  teaspoon ground nutmeg
    1  cup sugar
    2/3  cup milk
    1/3  cup light corn syrup
    1  teaspoon vanilla extract
    1   egg white, beaten to soft peaks

    Recipe

    Preheat oven at 350°F. Grease and flour a 9x9x2-inch baking pan. Combine flour, cornstarch, baking powder, salt, cinnamon, ginger and nutmeg in a large bowl.

    In a medium bowl, using a wire whisk combine sugar and milk until sugar is almost dissolved. Add light corn syrup and vanilla; stir well. Gently fold in egg white. Gradually fold egg-white mixture into flour mixture until smooth and incorporated. Spoon into baking pan. Bake for about 30 minutes or until a toothpick comes out clean when inserted in the center. Cool in the pan on a wire rack.

    Note: Beaten egg whites help a cake rise and should be folded into a batter rather than stirred in. Folding will help maintain the foamy quality while stirring will knock air out.
