    Mud: Mississipi Mud Cake

    List of Ingredients

    1 cup butter
    1 1/2 cups pecans
    2 cups sugar
    1/4 cup cocoa
    4 eggs slightly beaten
    2 teaspoons vanilla
    1/2 cup flour
    1 dash salt
    1 1/2 teaspoons baking powder

    ***ICING***
    1 large box powdered sugar
    1/4 cup cocoa
    1/2 cup canned milk
    1 stick margarine

    Recipe

    Cream butter and sugar; add eggs one at a time, beating after each. Mix sifted flour, cocoa, baking powder, and salt. Add to mixture. Mix well. Add pecans and vanilla. Bake in a 9x13 pan at 350ºF for 40 minutes. When done, cover cake with miniature marshmallows (3 C.). Return to oven for 2 minutes. Set aside 5 minutes. Beat icing ingredients till smooth. Pour icing over marshmallows. Allow to cool in pan. Leave in pan, or cut in squares.
