    Pudding: Mocha Walnut Brownie Pudding Cake

    List of Ingredients

    1/3 cup walnut pieces
    3/4 cup flour
    3/4 cup sugar
    5 tablespoons cocoa powder + 4 tbl. cocoa powder
    1 1/2 teaspoons instant coffee powder
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/4 teaspoon ground cinnamon
    1/2 cup skim milk
    1 tablespoon unsalted butter, melted
    1 teaspoon vanilla
    1/3 cup packed dark brown sugar
    1 2/3 cups boiling water

    Recipe

    Preheat oven to 350ºF. toast the walnuts on a baking sheet, stirring occasionally, about 5 minutes. Let cool. Coat a 9x9 inch baking pan with cooking spray. In a large mixing bowl, whisk together the flour, sugar, 5 tbl. cocoa, coffee powder, baking powder, baking soda, salt and cinnamon. Stir in the nuts.

    In a small bowl, stir together the milk, butter and vanilla. Add the liquid to the dry ingredients and stir until just blended (batter will be stiff). Spread batter evenly into the prepared pan.

    In a small bowl, stir together the brown sugar and remaining 4 tbl. cocoa. Sprinkle evenly over the batter. Pour the boiling water over the top. Do not stir. Bake the pudding until the top is glazed and turns a crusty dark brown, about 35 minutes. Cool the dessert in the pan on a rack for about 20 minutes. Serve warm. Serves 9.
