Pudding: Pumpkin Pudding Cake

List of Ingredients

2 c. all purpose flour
1/3 c. sugar
1 t. baking powder
1/2 t. baking soda
1/2 t. cinnamon
1/4 t. ground cloves
1/2 c. canned pumpkin
1/3 c. vegetable oil
1 lg. egg
1/2 c. raisins
1 c. orange juice or water
1/2 c. chopped walnuts


Recipe

Preheat oven to 350ºF. Combine the flour, sugar, baking powder and soda, cinnamon, and cloves in a bowl. Stir to mix. Add the pumpkin, oil, egg & orange juice. Mix for about 3 minutes. Stir in the raisins. Lightly grease a tube pan. Pour the walnuts in the bottom of the pan. Pour the cake batter over the nuts. Bake for 45-50 minutes. Your can serve it warm with ice cream or a whipped topping.
