Pumpkin: Pumpkin Spice Cake

18 1/4 ounces spice cake mix
3 eggs
1 cup cooked or canned pumpkin
1/2 cup water
1/2 cup oil
3 1/2 ounces instant vanilla pudding mix
1 tablespoon ground cinnamon
1/2 cup chopped pecans
favorite cream cheese frosting
Recipe
In a mixing bowl, combine cake mix, eggs, pumpkin, water, oil, pudding mix and cinamon. Beat at medium speed for 5 minutes. Stir in pecans. Pour into a greased and floured 10 inch fluted tube pan. Bake at 350ºF for 45-55 minutes or until cake tests done. Let cool in pan 10 minutes before removing to a wire rack. Frost cake or serve with whipped cream. Yield: 16-20 servings.
