Zucchini: Quick Zucchini Cake (using cake mix)

1 box yellow cake mix
4 eggs
1/2 cup oil
1 teaspoon cinnamon
1 tablespoon vanilla
2 cups unpeeled grated zucchini
1/2 cup raisins
1/2 cup chopped nuts


Recipe

Beat cake mix, eggs, oil, cinnamon and vanilla together in large bowl for 6-7 minutes. Fold in zucchini, raisins and nuts. Grease and flour a 10" tube pan and spoon batter in; bake at 350ºF for 40-50 minutes. Test with wooden pick at 40 minutes for doneness, then retest at 5 minutes intervals. Remove cake from pan and let cool on wire rack. Sprinkle with powdered sugar if desired.
