    Pudding: Rhubarb Pudding Cake

    List of Ingredients

    1 cup sugar
    1 egg
    1 cup buttermilk
    1/2 teaspoon salt
    1/2 teaspoon baking soda
    1 teaspoon baking powder
    2 cups flour
    1 cup diced fresh rhubarb
    Topping:2 tbl. butter melted +1/2 c. sugar

    VANILLA SAUCE:
    1/2 cup sugar (1/2 to 1)
    1/2 cup butter
    1/2 cup evaporated milk
    1 teaspoon vanilla

    Recipe

    Blend together sugar, egg and butter. Beat in buttermilk till smooth. Str together salt, baking soda, baking powder and salt. Stir dry ingredients into buttermilk mix; mix well. Stir in rhubarb. Pour into a greased 9" square pan. Combine topping ingredients and sprinkle on top of batter. Bake at 350ºF for 45 minutes or til cake tests done For sauce, combine all but vanilla; bring to boil and cook 1 minutes, stirring constantly. Remove from heat and stir in vanilla. Serve sauce over cake. Yield: 12 servings.
