    Old Time Fudge

    2 cups sugar
    3/4 cup milk
    1/2 cup baking cocoa powder OR 2 oz unsweetened chocolate
    1 dash salt
    1 teaspoon light corn syrup
    2 tablespoons butter
    1 teaspoon vanilla

    Recipe

    Butter sides of heavy 4 quart saucepan. In it combine first 5 ingredients. Stir over medium heat until sugar dissolves and mixture comes to boiling. Then cook to soft-ball stage (234ºF). It takes 5-10 minutes to get to soft ball stage. Stir only if necessary. Immediately remove pan from heat: add butter and cool to lukewarm (110ºF) without stirring. Add vanilla. Beat vigorously until fudge becomes very thick and starts to lose gloss (1 minute). Quickly spread in buttered shallow pan. Add 1/2 C nuts, if desired.
