    Lowfat Mandarin Chocolate Fudge

    List of Ingredients




    1 (12 ounce) package reduced-fat vanilla wafers
    1 (11 ounce) can mandarin orange segments
    1 (6 ounce) package chocolate chips
    1/4 cup low-fat evaporated milk
    1 tablespoon light margarine
    1 cup powdered sugar
    1/2 teaspoon orange extract
    2-4 tablespoons multi-colored candy sprinkles

    Line a 8" square pan with foil. In a food processor bowl with metal blade or blender with container, process wafers till fine, set aside. Place oranges in processor bowl and process 1 minute. Transfer oranges to heavy pot. Add chocolate chips, milk,and margarine stirring constantly. Stir in wafers, powdered sugar, and orange extract. Mix well. Spread mixture evenly in foil lined pan. Top with sprinkles, pressing firmly into mixture. Refrigerate till set. Cut into squares. Refrigerate.
