Truffles: Chocolate Butter Rum Truffles

8 tablespoons unsalted butter, softened
12 ounces bittersweet chocolate
1/2 cup caramel ice cream topping
3 ounces dark rum
powdered unsweetened cocoa
Recipe
Melt chocolate, caramel and rum together. Whisk until smooth. Add softened butter, whisk until smooth again. Chill until firm. Roll into 1-inch balls and dust with cocoa. Keep chilled until ready to serve.
