3 cups maple sugar
1 cup cold water
1 cup molasses
1 tablespoon real maple syrup
1 pinch cream of tartar
1/2 cup butter
2 tablespoons baking soda
1 tablespoon boiling water
1 teaspoon lemon extract
1 cup brazil nut meats
Recipe
Cook the sugar, water, malasses, syrup and cream of tartar to 300ºF, or to the hard-crack stage. Add the butter, boil for 4 minutes, then remove from heat. Add the soda dissolved in boiling water and the lemon extract. As soon as the mixture begins to foam, pour out in buttered platters, spreading very thin. Sprinkle with the chopped nuts.
