    Pralines: Maple Nut Pralines

    List of Ingredients

    2 cups pure maple syrup
    1 cup heavy cream + 2 tbl. if need
    1 tablespoon unsalted butter
    1 cup walnuts, chopped
    1 cup pecans, chopped
    1/2 teaspoon ground nutmeg

    Recipe

    Oil 2 baking sheets. In heavy saucepan over medium heat, stir together maple syrup and 1 c. cream. Clip candy thermometer to side of pan. Boil til thermometer reaches 238ºF, about 15 minutes. Remove from heat and let cool to 220ºF, about 5 minutes. Add the butter and stir just til melted and mix is creamy, about 1 minutes. Stir in nuts and nutmeg. Immediately, using a tablespoon, scoop up spoonfuls of mix and drop onto prepared baking sheets, spacing evenly. If mix becomes too dry to drop, add 2 tbl. cream and stir over low heat til melted. Let cool completely and store airtight at room temp up to 3 weeks. Makes 2 1/2 dozen.
