    Brittle: Microwave Peanut Brittle

    List of Ingredients

    1 cup sugar
    1/2 cup white corn syrup
    1 cup dry roast salted peanuts
    1 teaspoon butter
    1 teaspoon vanilla
    1 teaspoon baking soda

    Recipe

    In 1 1/2 qt casserole, stir together sugar and syrup. Microwave on high for 4 minutes. Stir in peanuts and microwave on high until light brown, 3-5 minutes. Add butter and vanilla, blending well. Cook on high for 1-2 minutes more. Peanuts will be lightly browned and syrup very hot. Add baking soda and gently stir until light and foamy. Quickly pour mixture onto lightly greased cookie sheet. Let cool for 1/2 hour. When cool, break into small pieces. Can be made with pecans or cashews. Store airtight.
