Brittle: Peanut Brittle

1 cup sugar
1/2 cup corn syrup
1/2 cup water
1 cup roasted peanuts
1 teaspoon butter
1/2 teaspoon vanilla
1 teaspoon vinegar
1 teaspoon soda
Recipe
Cook sugar, syrup, and water to the soft ball stage. Add peanuts and continue cooking until syrup is light brown in color and gives hard crack test. Remove from fire, add vanilla, soda, and vinegar. Mix well. Pour onto oiled sheet, spreading thin as possible. When nearly cool, wet hands in cold water and turn candy over, stretching to desired thinness. Cut into squares or break into pieces.
