    Brittle: Pine Nut Brittle

    List of Ingredients

    1 cup pine nuts
    1 tablespoon fine grated orange zest
    1 1/2 teaspoons unsalted butter
    1/4 teaspoon salt
    1 cup sugar
    1/3 cup water

    Recipe

    Butter baking sheet. In bowl, combine nuts, orange zest, butter and salt. Set aside. In heavy 2 qt. saucepan over low heat, combine sugar and water. Stir constantly til sugar dissolves. Using pastry brush dipped in water, brush down sides of pan to prevent sugar crystals from forming. Raise heat to high and bring mix to rolling boil.

    Continue to boil without stirring, swirling pan occasionally, til mix turns a deep golden color, about 10 minutes. Add the nut mixture and stir til coated with syrup. Immediately pour onto buttered baking sheet. Spread out slightly with wooden spoon, forming a thin sheet of brittle. Let cool completely, about 30 minutes. Break into pieces. Store airtight at room temp up to 1 week.
