Mints: Potato Fondant Mints

1 medium potato, baked
1 pinch salt
1 tablespoon butter, softened
5 drops peppermint oil
2 c. powdered sugar -- (2 to 4)

Recipe
Scoop potato from skin and mash thoroughly. Add ingredients except sugar; mix well. Add sugar, 1/2 cup at a time, beating well. When mixture is heavy, turn out on confectioners' sugar and knead smooth. Add enough sugar to form a pie dough like consistency. Chill, knead again. Form into balls and flatten. Let dry enough to form crust. Store in airtight container.
