Pudding Candy Clusters

List of Ingredients
3 ounces vanilla pudding (not instant)
1 cup sugar
1 cup salted peanuts
1/2 cup evaporated milk
1 tablespoon butter
1/4 teaspoon vanillaRecipe
Blend dry pudding and sugar in 2 quart saucepan. Stir in evaporated milk. Add butter. Cook and stir over medium heat until it comes to a boil. Lower heat and boil gently for 3 minutes. Stir constantly. Remove from heat. Stir in peanuts and vanilla. Beat immediately (while pudding is hot) It will become somewhat dull. Pour in greased loaf pan or drop by teaspoon onto foil. Let cool until set.
VARIATIONS:
For chocolate- use 1 ( 3 oz ) pkg chocolate pudding and walnuts or raisins instead of vanilla pudding and peanuts
For butterscotch--use 1 ( 3 oz) pkg butterscotch pudding and pecans instead of vanilla and peanuts
For coconut cream-- use 1 ( 3 oz) pkg coconut cream pudding in place of vanilla
For lemon-- use 1 ( 3 oz) pkg lemon pudding instead of vanilla. Omit the vanilla flavoring and use 1 cup flaked coconut in place of peanuts
