    Banana Rum Cheesecake

    2/3 cup graham cracker crumbs
    2 tablespoons butter or margarine, melted

    Preheat oven to 325°F.  Grease a 9-inch springform pan with butter. In a medium bowl, combine cracker crumbs and butter; mix thoroughly.  Press into bottom of prepared springform pan; set aside.


    1 cup sugar
    4 eggs
    3 8-ounce packages cream cheese, softened
    1/4 cup rum
    1 pound bananas, mashed

    In a large mixing bowl, combine sugar, eggs, cream cheese, rum, and bananas; beat until well blended and smooth.  Pour into prepared springform pan. Bake for 60 minutes or until lightly browned on top.  Cool for 20 minutes.

    1/2 cup sugar
    2 teaspoons lemon juice
    4 ounces cream cheese, softened
    2/3 cup sour cream
    1 banana, sliced
    In a medium bowl, combine sugar, lemon juice, cream cheese, and sour cream; beat until smooth.  Pour on top of cheesecake. Bake for 12 minutes.  Cool to room temperature.  Chill.  Garnish with banana slices.
