    Basic: Basic Cheesecake

    List of Ingredients

    3/4 cup fine graham cracker crumbs
    2 tablespoons butter
    1 cup + 2 tbl. sugar
    1 1/2 pounds cream cheese, softened
    3 eggs
    2 teaspoons vanilla
    2 cups sour cream

    Recipe

    Have butter, cheese and eggs at room temp. Mix crumbs, butter and 2 Tbsp sugar. Blend well. Press on bottom of 9" springform pan. Cream cheese well. Slowly beat in 1 cup sugar. Then add eggs, one at a time, beating well after each addition. Add 1 tsp. vanilla. Pour into prepared pan. Bake 350ºF for 20 minutes or until set (I find it takes a little longer than this, however, don't let it get too firm in the center or the sides will be too dry). Remove from oven and increase heat to 500ºF. Mix sour cream, 3 Tbsp sugar and 1 tsp. vanilla. Spread on cake. Return to oven and bake 5 minutes. Cool, then chill.
