Basic: Basic Cheesecake

3/4 cup fine graham cracker crumbs
2 tablespoons butter
1 cup + 2 tbl. sugar
1 1/2 pounds cream cheese, softened
3 eggs
2 teaspoons vanilla
2 cups sour cream
Recipe
Have butter, cheese and eggs at room temp. Mix crumbs, butter and 2 Tbsp sugar. Blend well. Press on bottom of 9" springform pan. Cream cheese well. Slowly beat in 1 cup sugar. Then add eggs, one at a time, beating well after each addition. Add 1 tsp. vanilla. Pour into prepared pan. Bake 350�F for 20 minutes or until set (I find it takes a little longer than this, however, don't let it get too firm in the center or the sides will be too dry). Remove from oven and increase heat to 500�F. Mix sour cream, 3 Tbsp sugar and 1 tsp. vanilla. Spread on cake. Return to oven and bake 5 minutes. Cool, then chill.
