Blueberry: Blueberry Mountain Cheesecake

2 packages cream cheese
1 package instant vanilla pudding
2/3 cup nonfat dry milk
1 cup diet mountain dew or 7 up
3/4 cup cool whip Lite®
1 1/2 teaspoons coconut extract
1 Keebler piecrust
1/2 cup blueberry spreadable fruit
2 tablespoons flaked coconut
Recipe
In large bowl, mix cream cheese til soft. Add dry pudding mix, dry milk powder and mountain dew. Mix well using wire whisk. Blend in 1/4 c. cool whip lite and 1 tsp coconut extract. Pour mix into piecrust. Refrig for 15 minutes. In small bowl, mix blueberry fruit, rest of 1/2 c. coconut extract, and remaining 1/2 c. cool whip. Spread mix evenly over cheesecake filling. Sprinkle coconut evenly over top. Refrig til ready to serve. Hint: diet 7UP, Diet Slice or plain water can be used in place of mountain dew.
