Butterscotch: Butterscotch Cheesecake

CRUST:
1 package chocolate wafer cookie crumbs
1/2 cup butter -- melted
1/2 cup sugar
FILLING:
2 packages light cream cheese
1 cup sugar
4 eggs
3 tablespoons cornstarch
1/2 cup light cream
1 teaspoon vanilla
1 dash salt
Sauce:
1 cup brown sugar -- packed
1/4 cup corn syrup
3 tablespoons whipping cream
4 tablespoons butter
1/8 teaspoon salt
Recipe
Mix ingredients for crust and then press into bottom and sides of springform pan, to 1/2 inch of the rim. Beat cream cheese and sugar until fluffy. Mix in eggs, cornstarch, whipping cream, vanilla and salt. For sauce, combine brown sugar, corn syrup, whipping cream, butter and salt. Cook over low heat until melted and bubbly. Cool for 10 minutes. Pour part of cream cheese mix into crust. Spoon some of the butterscotch sauce over the mix. Repeat layers and swirl, just until partially blended. Bake at 350ºF for 45 minutes on rimmed pan to catch butterscotch drippings. Reduce heat to 300ºF and bake 15 minutes longer. Cool 8 hours or overnight.
