1 1/2 cups chocolate cookie crumbs
1/4 cup melted butter
3 8 oz cream cheese, softened
1 1/2 cups sugar
1 tablespoon dry espresso grinds
2 teaspoons vanilla
3 eggs
1 1/2 pints sour cream


Recipe

Preheat oven to 375ºF; press crumb mix (cookie and butter) into 9" springform pan. Beat together cream cheese, sugar, coffee and vanilla for about 5 minutes til smooth and fluffy. Add eggs one at a time mixing just to incorporate. Add all sour cream at once and blend well. Pour into pan and bake at 375ºF for 35-40 minutes; will appear set but not done. Cool and then wrap in plastic and refrigerate overnight.
