    Ricotta: Carmine's Italian Ricotta Cheesecake

    List of Ingredients

    3 pounds ricotta cheese
    1/4 teaspoon vanilla
    12 eggs
    1/2 cup graham cracker crumbs
    1/2 pound powdered sugar
    1/3 cup amaretto

    Recipe

    Butter the bottom of a 9-inch springform pan and layer with graham crackers. Place remaining ingredients in a bowl and mix well, fully incorporating. Place in preheated oven and bake at 325ºF for about 1 1/2 hours. Test with toothpick. Turn oven off, leaving door ajar to let cake gradually cool on oven rack (to prevent cracking). Refrigerate.
