    Coffee: Espresso Cheesecake

    List of Ingredients

    3 pounds cream cheese, softened
    1 1/4 cups sugar
    3 tablespoons flour
    3 egg yolks
    4 eggs
    1/4 cup heavy cream
    1 cup base syrup

    Recipe

    Preheat oven to 475ºF. Mix cream cheese till fluffy, then beat in sugar and flour. Add eggs and yolks one at time, beating well after each. Add cream and base syrup and pour into a springform pan. Use standard crust. Bake at 475ºF for 20 minutes, then lower heat to 200ºF and bake for additional 1 1/2 hours. Let sit in oven an extra hour to cool, then refrigerate. For Base Syrup: 2 c. brown sugar, 4 c. water, 1 oz vanilla, 2 oz strong instant coffee powder. Boil sugar and water for 10 minutes, then cool slightly. Add coffee and vanilla, and then cool thoroughly.
