    Lemon: Fantasia Lemon Cheesecake with White Chocolate

    List of Ingredients

    FILLING:
    16 ounces cream cheese, softened
    1/2 cup lowfat sour cream
    1 1/4 cups sifted powdered sugar
    2 tablespoons lemon juice
    2 teaspoons grated lemon rind

    VANILLA LEMON COOKIE CRUST:
    1 1/2 cups vanilla wafer crumbs
    1/4 cup finely chopped walnuts
    2 teaspoons grated lemon zest
    3 tablespoons sugar
    1/4 cup butter, melted

    Recipe

    For crust, line a 10" springform pan with parchment paper and lightly grease the paper. In a bowl, stir together crust ingredients and press mixture on the bottom and 1" up the sides of the prepared pan. Bake at 350ºF for 8 minutes, or until top is just beginning to take on color. Set aside to cool. For filling, beat together all ingredients until blended. Spread mixture evenly into prepared crust and refrigerate until firm. Place 1 pint fresh raspberries along the edge forming a 1" border,and sprinkle 4 tbl. grated white chocolate in the center.
